5 Unique and Easy Grilling Recipes


It’s always fun to cook outdoors, under the open sky and adding a new and unique recipe’s aroma to the atmosphere would the finest of the moments to cherish with your dear ones! The mesmerizing fragrance of cooked food, along with the amazing grill and smoke is what makes it so special. Of course, not unless you add the best portable grill to your checklist while cooking outdoors.

However, there are countless grilled recipes to choose from and, at times it gets difficult to choose the ‘out of the box’ and easy to cook recipe. Here is a list of my favorite 5 unique and easy to cook grilled recipes, that also includes two special vegetarian dishes for the veg lovers!

1.      Grilled Salmon With Mexican Corn Salad

This is one healthy combination of meal that is, again easy to cook and has a unique blend of flavors. Also, I personally consider salmon as the best when it comes to grilled seafood.


  • Large filet salmon
  • Salt
  • Cracked black pepper
  • Extra virgin Olive oil
  • Salt-free drained sweetcorn
  • Chopped red onion
  • Chopped coriander
  • Honey
  • Red wine vinegar
  • Chopped and deserved tomatoes


  • Preheat the grill to high heat
  • Season salmon with salt, black proper and rub each side with 2 tsp Olive oil.
  • Place salmon carefully onto the grid with skin side up and heat for 7-9 minutes each side.
  • Take salmon off the grill when done.
  • Take a bowl, add sweetcorn, chopped onions, chopped tomatoes and coriander. Spray lime juice followed by olive oil and a tsp of honey and a tsp of red wine vinegar. Toss well so that everything mixes up. Leave for a few minutes.

The recipe is ready to serve. Add more salt and black pepper as per your taste!

2. Grilled Chicken Breast with Lentil Salad

Now, this is one of those recipes that simply requires basic chicken grilling. So the taste simply depends on how well you grill the chicken. Of course, one would expect the perfect taste and for that, you got to make sure you are using the best portable grill that works high-end for your cooking needs!


  • 600 gm chicken breast
  • Extra virgin olive oil
  • Kosher salt
  • Black pepper
  • Green lentils
  • Chicken stock
  • Red pepper
  • Zucchini
  • Green onion diced
  • Avocado
  • Red wine vinegar
  • Chopped basil


  • Slice chicken to desired size and season with a tsp olive oil, black pepper, and salt.
  • Sear chicken on both sides over high heat, with first 15 minutes under direct heat and next 5-10 minutes on side grill (move the coal pieces aside and keep chicken under indirect heat)
  • Add lentils to the chicken stock, a cup of water and bring to boil.
  • Drain and cool after 25mins. Blend up red wine vinegar, basil, salt, pepper, and a tsp olive oil in a bowl.
  • Place red pepper, sliced zucchini and ½ inch sliced avocado on the grill for 5 minutes. Extract on a bowl, add the blend seasoning along with lentils.
  • Toss with chicken and salad before serving.

You can also marinade chicken to add your own twist!

3. Grilled Vegetable Platter with Pepper

This one is a special addition to the list for vegetarians and is a unique recipe to try out on your next barbecue party.


  • Extra virgin olive oil
  • Honey
  • Balsamic vinegar
  • Dried oregano
  • Garlic powder
  • Black pepper
  • Salt
  • Trimmed aspharagus
  • Carrots small and cut in half- 2 to 3
  • Sweet red pepper
  • Yellow summer squash
  • Red onion widged


  • Add 2 tsp honey, 4 tsp balsamic vinegar, ½ tsp black pepper, and salt in 4 tsp olive oil.
  • Add the marinade to a plastic bag and place the cut vegetables in it. Marinate for 1 ½ hours at room temperature.
  • Place the vegetables on a grill at medium or low heat for 8-12 minutes with occasional turning.
  • Extract on a plate. Add the remaining marinade before serving.

4. Grilled pork Chops with Coriander

A recipe with the least ingredients but again, the one that requires some tricky grilling skills.


  • 4 rib chops or centre-cut pork chops
  • Extra Virgin olive oil
  • Paprika
  • Salt
  • Black pepper


  • Preheat the grill to high heat(500°F).
  • Season chop pieces with olive oil. Mix 2 tsp paprika, 2 tsp salt and 1 tsp black pepper and sprinkle over the chops. Place the pieces on the grill.
  • Grill on high heat for 2 minutes and then on indirect heat for next 15-minutes (each side).
  • Turn the grill off, let the meat stay for the next 15 minutes, covered for the best taste.Best portable grill shall do the work within the desired time with a +/- 2 minutes of margin.


5. Grilled Pineapple Salsa Recipe With Sweetcorn

This recipe is one of my favorite dessert grill recipe that’s easy to cook and, sure to knock your taste buds off your tongue! But, as stated in the previous recipe, a perfect portable grill shall do the magic in your cooking to get the real deliciousness.


  • Peeled and sliced pineapple
  • Red ball pepper
  • Jalapeno
  • Lime
  • Honey
  • Cumin
  • Red onion
  • Kosher salt
  • Boiled and salt-soaked sweetcorn
  • Coriander


  • Preheat grill to medium or high flame.
  • Brush the pineapple slices(1/2 inch), pepper and half cut lime with olive oil and season with a little salt. Place them carefully on the grill.
  • Grill the lime and jalapeno pepper for 3-4 minutes and pineapple for 6-8 minutes till caramelization.
  • Take them off the grill and remove the jalapeno seeds if you don’t want it to be spicy. Chop the jalapeno and pepper to small pieces and add half tsp red pepper.
  • Take a bowl, add olive oil 1 tsp, ½ tsp grilled lime juice, ½ tsp cumin, along with salt and black pepper. Whisk together.
  • Add pineapple, pepper, onion and corn and toss. Season with salt pepper and cumin as per taste.
  • Leave for 30 minutes and stir before serve.
