I received the Tasting the Seasons cookbook a few weeks ago, and it is fabulous.  There are so many great recipes, where do I begin?

tasting the seasonsWe’ve been looking for a great Meatloaf recipe, where the meatloaf isn’t dry, and I found one in this book.  Check out this recipe, below:

Classic Meatloaf

2 eggs

1/2 cup quick cooking oatmeal (uncooked)

1 package onion dip mix

2 pounds Ground Beef

1 can (8 ounces) tomato sauce

2 tablespoons brown sugar

2 tablespoons apple cider vinegar

1 tablespoon Worcestershire sauce

1 teaspoon Dijon-style mustard

Preheat oven to 350 degrees.  in a bowl whisk eggs, add oatmeal, onion soup mix and ground beef and mix until egg mixture is fully combined in the meat.  Shape into a rectangle and place in an 11 X 7-inch baking dish.  In a medium bowl, combine tomato sauce, brown sugar, vinegar, Worcestershire sauce & mustard.  Pour over meatloaf.  Bake uncovered for 1 hour.  Serve Immediately.  Makes 8 servings.

That meatloaf will melt in your mouth.  It’s that good.

For breakfast, there’s recipes like Peach Pancakes, Natually Sweetened Blueberry Muffins, and French toasted Croissants with Blueberry Sauce.  For soups, these include Curried Carrot Soup with coconut shrimp and Apple Cinnamon Butternut Squash Soup.  Then for Sweet Endings, there are recipes like:  Coconut Lime Cake, and Strawberry Cobbler Cake.

My daughter is a senior in High School, so this cookbook will be hers.  When she moves out, she will have a great start to some fantastic recipes.  If she follows the recipes, they are great tasting.
