If you want nonstick cookware, you’ll get it with aluminum. You won’t have to add any fats at all to cook your food, so it’ll be the optimal choice for health-conscious home chefs.

You should never use spray oils on nonstick cookware. This will render the nonstick coating useless. You should also never use a broiler on it (oven use is ok).

Cast Iron

You don’t even need to ask, “is cast iron good?” The thing is, cast iron is a classic type of cookware for good reason. It can be used both on the stove and oven.

Also, the older your cookware gets, the more seasoned it becomes. This will make your cooking better and better.

Acidic foods might make some metals leech out, but it’s very minimal so it won’t matter much. If you take care to season your cookware right, it’ll last you a lifetime, and then some. It’s not uncommon to hear of people passing their cast iron cookware down from generation to generation.
