Eggs Benedict Pie with Hollandaise Sauce

Eggs benedict pizzaMy husband has been bugging me to make Eggs Benedict Pie with Hollandaise Sauce for some time now. I love it, and it’s true we don’t have it as often as we should. The recipes was combination of wanting breakfast and piazza at the same time a few years back. It’s become a family favorite in my home. It’s easy to make and it’s delicious too! 

For the Hollandaise Sauce:

Briskly whisk the egg yolks and lemon juice together in a bowl and until the mixture is thickened and increased in volume by about double. 

Place the bowl over a saucepan of simmering water (or use a double boiler,) make sure the water is not touching bottom of the bowl. Whisk briskly. Don’t let the eggs get too hot or they will scramble. eggs lemon

 Drizzle in the melted butter a tablespoon at a time and continue to whisk until the sauce is thickened and increased in volume.

Remove from heat, whisk in salt and pepper. Remove from heat and set aside until ready to use for the eggs benedict. The sauce may thicken as it sits, simply whisk in a few drops of warm water before serving.

Egg Directions:

Fill a small pan half full of water. Add the vinegar to the cooking water.This will keep the egg whites from separating and help them cook faster. Bring to a slow boil. Gently break 1 of the eggs onto a small plate, careful not to break the yolk.

Gently slide the egg from the plate into the water. Repeat this step until all 8 eggs are done. Each egg should cook 3 1/2 minutes until the egg white is set and yolk remains soft. Using a slotted spoon to remove each egg and set aside.

Biscuit Directions:

Ingredients:

Remove the biscuits from the container and place on a flat surface, gently roll each biscuit forming a small, individual pie shape.

Assembly Directions:

Spread about one tablespoon of hollandaise sauce on each biscuit. Sprinkle mozzarella cheese over the sauce.

Place a slice of Canadian bacon on top of each biscuit.

Sprinkle lightly a little more mozzarella cheese on the Canadian bacon.

Cook @ 350 degrees for about 10 minutes. Or until you notice the pie/biscuit browning. Remove from oven and place one egg on each pie and return to oven for about 3 minutes.

Place each pie in individual severing place, drizzle with hollandaise sauce. Add Fresh chopped green onion, for garnish (optional)

  1. 4 egg yolks

  5. Pinch salt

  14. Fresh chopped green onion, for garnish (optional)
